Since opening in August 2009, Dojo Gelato has experienced business growth not originally anticipated. As a result, production has increased 32%, sales have grown, and the staff has increased fivefold. Owner Michael Christner has even introduced a new delivery truck and mobile gelato cart to keep up with demand.
